Chicken stuffed tomato and basil 

Quick recipe idea: get chicken breasts or chicken thighs. I use thighs since they’re usually cheaper and more flavorful to me. 

Preheat oven to 400 degrees. 

Season chicken how you prefer. I used Italian seasoning, seasoning salt, salt and pepper. 

Cut slits in the breasts with a sharp knife. Usually about 3-4 slits is what I can fit. Then put a cherry tomato,basil leaf and mozzarella cheese in each slit. In this pic I actually didn’t use mozzarella and it still tasted great. Brush each chicken with olive oil. 

Bake for about an hour or until chicken is done and juices are clear. 

Serve with sides of your choice and enjoy!
